2 Dinners / 2 Desserts…Enjoy!

Accidentally Amazing Pasta (Serves 2) PERFECT FOR MEATLESS MONDAY!
5 Tablespoons Olive oil
2 shallots
5 cloves of garlic – minced
1 container cherry tomatoes (cut in half)
Fresh Basil (cut)
Red Pepper Flakes (optional)
Fresh spinach
Bowtie Pasta

In large pan/ pot mix olive oil, diced shallots and garlic for 5 minutes on low/ medium heat until shallots become transparent (don’t burn garlic, mix often)
Add to the pan your tomatoes, basil, oregano, salt & pepper & maybe some red pepper flakes
Cook 10-15 minutes on low/ medium heat
Add spinach (it cooks down a lot, so you may keep adding)

Make pasta (10 oz for 2 people is good)
Drain pasta
Add pasta to pan/ pot of tomatoes

Serve with bread and butter

**To make this your own add chicken or shrimp

Fruit Cobbler
2/3 cup flour
1/3 cup sugar
1 t salt
3 eggs
4 T butter
½ cup milk

Pour fruit into pie dish
Mix together lemon zest, flour, sugar, salt – add in liquid eggs, melted butter, milk & ½ lemon juice
Pour batter over fruit
Bake 365 degrees 25 – 30 minutes

Panko Fried Chicken
Boneless skinless chicken breast (pounded out really thin)
Panko Bread Crumbs (Italian is my favorite)
Vegetable Oil

Be sure chicken is very thin
Dip chicken in flour (seasoned with salt & pepper & maybe paprika) – dust off extra flour
Dip chicken in egg – let extra egg drip off
Dip chicken in flour – dust off extra four
Dip chicken in egg – let extra egg drip off
Coat with Panko bread crumbs
Drop in Vegetable Oil that that has been getting warm on the stove
Cook for a few minutes on each side – do NOT over crowd pan
Put on a baking sheet lined with paper towels

Pineapple Cake
1 box yellow cake mix 1 (20 oz) crushed pineapple (I use the one in heavy syrup)
1 c sugar
2 (6 oz) instant vanilla pudding

Bake cake according to package directions. Bake in 9X13″ pan. Cool.
Mix pineapple and sugar. Cook until it starts to boil. Cool slightly.
Poke holes in top of cake with a fork. Pour pineapple mixture over cake.
Mix pudding according to package directions. Spread over pineapple. Chill.
